I avoid cashews, will this course still work for me?
Yes. I also avoid cashews and make my own cheeses from almonds, macadamias, coconut, sunflower seeds, Brazil nuts, vegetables, and fresh or dried herbs. In the few lessons where cashews are demonstrated, you can easily substitute macadamias or almonds.
Are the cheeses in the course suitable for diabetics or those on a low-carb/keto diet?
Yes. The cheeses are suitable for diabetics, support a healthy microbiome and immune system, and add variety and richness to your diet.
I’m allergic to nuts, can I still join?
No. Many of the cheeses contain nuts, almonds, or seeds, so the course is not suitable for people allergic to these.
However, if you’re only allergic to peanuts, you can join without any concern.
What are the main ingredients the cheeses are based on?
Nuts, almonds, a variety of seeds, vegetables, fresh herbs, coconut, high-quality spices, and more.
Are the recipes soy-based?
The recipes are not soy-based. Only one cheese in the course contains tofu.
Will I need any special equipment for the course?
For best results, you’ll need a high-powered blender that can create smooth textures (a good test is whether it can crush ice). An immersion blender won’t work. All other tools are common in most kitchens, and if you don’t have them, they’re inexpensive and easy to find (such as a strainer, bowl, and cotton cloth/kitchen towel).
